Fried Catfish & Cod, Hush Puppies and a Beer Salad Dressing


















This is our introduction post to the cooking blog world. We decided to make some fried catfish and fried cod, along with some beer fried hush puppies and a homemade beer salad dressing.

Hushpuppies Recipe:
1 3/4 cup Corn Meal
3/4th cup Flour
1 1/2 teaspoon Baking Powder
1 Teaspoon of Salt
1 Cup Chopped Onion
1 Beer of your choice. (We used a bottle of Corona this time)
1 to 2 cups of oil for frying.  (On Medium, in the Cast Iron)

Hush Puppies are a staple for anyone from the south, I'm from Texas and I grew up and have perfected this Hush Puppies recipe. First in a bowl mix the corn meal and flour together. Add the baking powder, salt and mix well. Then add the cup of onion and the whole bottle of beer. Mix it all together. Then I like to just use my hands and make small balls of the hush puppies ( a little bit under the size of a golf ball as they will get a bit bigger as you fry them). Gently put the hush puppies in the fryer and as they cook they will start to float in the oil, you should cook them until they are a nice golden brown. Once they are a golden brown, they are done. Pull them out and let them dry on some paper towels. Serve hush puppies with ketchup. This Recipe will make about 30 hush puppies.

Fried Fish Recipe:
Use Any Fish you would like. In this we used some Cat fish and Cod. 
1 cup Flour
2 Eggs
3 teaspoons Tonys Creole Seasoning.
(And the Oil you fried the hush puppies in)

Frying fish or chicken or honestly anything is really simple. You scramble two eggs together in a bowl. In a separate bowl you add the flour and Creole Seasoning and mix together. Then you dip the fish into the eggs and then into the flour. Coat the fish in flour and drop it into the fryer. When the fish get to a beautiful golden brown, the fish is done and you can pull it out and enjoy.

Beer Salad Dressing Recipe:
6 teaspoons Olive Oil
1/2 Cup Onions
2 Teaspoons Garlic Powder
3 Teaspoons Vinegar 
2 Teaspoons Dijon Mustard
3/4th cup Beer of your choice. 
2 Teaspoons Brown Sugar

Put the olive oil in the pan and cook the onions for 5 minutes on Medium. Then add the garlic powder, Vinegar, Dijon Mustard, Beer and Brown Sugar and whisk for 3 minutes on Medium.  You can let it chill then pour it over your salad.
